1 cup of white wine
1/2 cup of medium onion, finely chopped
1/2 cup of garlic scapes, finely chopped (use only the white part)
1/2 cup of carrot, finely chopped
3 tablespoons of olive oil
1 tablespoon of thyme leaves, finely chopped
8 ounces of cod
5 ounces of white beans
2 cloves of garlic, minced
1 sprig of thyme
1 tomato, peeled and seeded, finely chopped
Salt and black pepper to taste

Rinse the cod
Break it down into flakes, removing the skin and bones
Set aside
In a pan, heat the olive oil and onion, stirring until golden
Add garlic scapes and carrot, cook for 1 minute
Add thyme leaves and tomato, bring to a boil, then add white wine
Simmer for 10 minutes
Add cod, salt, and pepper, simmer for 20 minutes
Place the drained white beans in a pan with thyme sprig and cover with water up to 2 inches from the top of the bean
Bring to a boil with the pan covered for 40 minutes or until tender
Reserve 1 cup of the cooking liquid and drain
Combine white beans with cod and reserved liquid
Simmer for 5 minutes
Serve over toasted white bread, drizzled with olive oil.
