Mix the ground beef with the mashed potato, gravy, parsley, and 1 egg
Blend well
Season with salt and black pepper
Shape the croquettes using a spoonful of the prepared mixture
Dip in the remaining egg, lightly beaten, and then in flour
Repeat the process, dipping again in egg and then in flour
In a small skillet with high sides, heat about 1/3 inch of oil and fry the croquettes, in batches, until they're golden brown
