Season the spinach with salt and pepper
In a pan, combine the water and butter
Heat until boiling, then remove from heat
Mix the flour with nutmeg and add to the pan all at once, stirring well until the mixture is loose on both sides of the pan
Remove from heat and add eggs one at a time, beating well with a wooden spoon
Add the spinach and mix very well
Scoop into tablespoon-sized portions to make the fritters using 1/2 tablespoon each time
Fry in hot vegetable oil until golden brown, then serve 6 pieces.
