Use a firm-fleshed fish, chop it or flake it coarsely
Soak the pinch in milk, squeeze out the excess milk and shred the pinch
Mix the fish with the shredded pinch, 1 egg, chopped onion, salt, and black pepper
Shape into croquette logs about 15 cm long and 2.5 cm in diameter
Coat the croquettes first in all-purpose flour, then in the remaining egg beaten with a tablespoon of milk, and finally in breadcrumbs
Set aside
Heat the butter in a frying pan, reduce heat and fry the croquettes slowly until golden brown on all sides
Drain and serve with mustard or mayonnaise sauce
