3 tablespoons butter or margarine
6 tablespoons all-purpose flour
1/2 cup beef broth
1/2 cup milk
salt and black pepper to taste
2 egg yolks
100g Mozzarella or Minas cheese, grated, or fresh Minas cheese
To coat:
4 tablespoons all-purpose flour
2 eggs
6 tablespoons cracker crumbs
3 tablespoons butter or margarine
6 tablespoons all-purpose flour
1/2 cup beef broth
1/2 cup milk
salt and black pepper to taste

To coat:
4 tablespoons all-purpose flour
2 eggs
6 tablespoons cracker crumbs
Melt the butter or margarine in a pan
Add the flour all at once
Stir and cook for 5 minutes
Mix in the milk and broth, stirring well
Cook over low heat, stirring, for 8 minutes
Season to taste
Add the egg yolks slowly, stirring well
Refrigerate for 40 minutes
Add the grated cheese
Shape into fritters
Coat first in flour, then eggs, and finally cracker crumbs
Fry in hot oil until golden brown
Serve hot
Yield: 18 fritters.
