Cut the mortadela into small pieces
In a bowl, mix together the mortadela, grated cheese, chopped parsley, milk, egg, all-purpose flour, salt, pepper, and chopped fresh herbs
Cover with plastic wrap and refrigerate for 30 minutes
Mold the croquettes and coat them in beaten egg and breadcrumbs
Fry in hot vegetable oil until golden brown
