400 grams of ricotta cheese
3/4 cup cracker crumbs, finely ground
2 tablespoons of oil
3/4 cup and 2 tablespoons more of all-purpose flour
1/2 cup of dried apricot
3 tablespoons of brandy
1 cup of cottage cheese
3 tablespoons of wheat flour
2 eggs
3 egg whites
1 tablespoon of orange zest
1 tablespoon of lemon zest
A few drops of vanilla extract
2 tablespoons of confectioner's sugar

In a bowl, mix the biscuit crumbs, oil, and 2 tablespoons of all-purpose flour until well combined
Butter an ungreased 9x13 inch baking dish and bake for 8 minutes in a medium oven. Reserve
Meanwhile, soak the dried apricot in brandy
In another bowl, mix the ricotta cheese, cottage cheese, remaining all-purpose flour, eggs, egg whites, vanilla extract, orange zest, and lemon zest until well combined
Add the soaked dried apricot and brandy to the mixture and stir until smooth
Pour this mixture into the cold dough and bake in a medium oven for 40 minutes, or until set
Let it cool and refrigerate before serving
To serve, dust with confectioner's sugar.
