    To make the dough: In a large bowl, combine the all-purpose flour, sugar, cold butter, and grated lemon zest. Mix until crumbly with your fingers.

    Gather the eggs and lightly knead them together with your hands.

    Make a ball with the dough, wrap it in plastic film, and refrigerate for about 30 minutes.

    To make the filling: While the dough is chilling, peel the apples, remove their cores and seeds, and cut them into small pieces.

    Place the apple pieces in a medium saucepan, add the wine, sugar, and water. Cook over medium heat, stirring occasionally with a wooden spoon, until the apples are tender (about 5 minutes).

    Dust two sheets of parchment paper with flour.
