In a pan, heat the olive oil and garlic until the zucchini is cooked but still crisp
Remove from heat, add the tomato and mozzarella
Rub each slice of Italian bread with the whole garlic clove
Arrange on a baking dish, drizzle each one with a little olive oil
Top with mozzarella and vegetables
Dust with parsley
Bake in a preheated oven at 200°C for 10 minutes or until the mozzarella is melted
Serve immediately
