3 liters plus 1/4 cup of water
3 kg of peeled and cubed sweet potatoes (about 2 large or 3 small)

In a large pot, bring 3 liters of water to a boil over high heat
Add the sweet potatoes and cook for about 15 minutes or until they're tender but still firm
Drain, cut the sweet potatoes into cubes, and set aside
In a medium pot, heat the olive oil over high heat
Sauté the onion until it starts to brown
Add the reserved sweet potatoes, stirring constantly, and sauté for about 7 minutes or until they start to brown
Add the remaining water and stir well
Season with salt to taste, then drizzle with a little olive oil
Remove from heat, add chopped parsley, and serve hot
