Grate the coconut and add a little water to remove the thick cream (one cup)
Divide the grated coconut into two parts: in the first part, add one liter of water to remove the thin cream; in the second part, add tapioca, 2 tablespoons of sugar, and a pinch of salt
Put the pudding maker on the fire with a little water at the bottom
When it's boiling, take a clean cloth and place it on top of the pudding maker with a little of the tapioca mixture to warm it up; remove and place it in a plate
Repeat the operation with all the mixture
Add the thin cream, seasoned with sugar and salt, to the warmed tapioca
Let it rest for half an hour to set
Turn it into a plate and pour the thick cream on top
Serves 12 people.
