2 cups of couscous
2 zucchinis, cut into cubes

100g of salted cashews

In a suitable microwave-safe bowl, place 2 cups of water to boil for 4 minutes on high power
Remove the water, add couscous, 1 pinch of salt and black pepper, and extra virgin olive oil
Mix well and cover for 5 minutes
While that's cooking, season the vegetables with salt, black pepper, and a drizzle of olive oil
Microwave for 3 or 4 minutes on high power to lightly cook them
Remove from microwave and mix in couscous (which should be loosened with a fork after being covered)
Combine the herbs and cashews, and serve hot or at room temperature.
