1 kg of clean pork rump, cut into strips
0.5 kg of white beans
0.5 kg of salted pork ribs
2 1/2 liters of water
Lemon juice from 1 lemon
2 soup spoons of olive oil
4 cloves of garlic
2 tomatoes, peeled and seeded
1 onion
1 bay leaf
1 Calabrian pepper
Salt, black pepper, and cumin to taste

Soak the white beans in water for the next day
Put the pork ribs in water and change it four times until the next day
Drain and scald them with cold water
Drain again and put them in a pot with 2 1/2 liters of water
Cook until it starts to get mushy
Reserve the water and pork ribs separately
While that's happening, soak the pork rump in cold water with lemon juice for two hours
Drain, wash it, and put it in a pot with water
Boil for two minutes
Drain and reserve
In a pressure cooker pan, sauté the garlic, tomatoes, and onion in olive oil
Add the pork rump and season with salt, black pepper, and cumin
Sauté for three minutes
Add the reserved water from the pork ribs and bay leaf
Cover the pot and cook for 20 minutes
Open it up and add the drained white beans, sliced Calabrian pepper, and pork ribs
Cover again and cook for another 20 minutes or until the beans are mushy and the sauce has thickened
If needed, add hot water.
