Peel the pineapple, cut it into wedges and remove the core
Cut the wedges in half and reserve
In a large saucepan, bring sugar to high heat, stirring occasionally, until caramelized
Reduce heat and slowly add water, still stirring, until the syrup thickens

When boiling, reduce heat, cover the pan, and cook for 20 minutes
