In a large pot, bring 2 liters of water to a boil
Add the bananas and let it come back to a boil
Drain and reserve
In another large pot over medium heat, make a thick syrup with the water and sugar
Reduce the heat, add the bananas and lime juice
Start adding more water as needed, without stirring, until the syrup thickens
Cook for 2 hours or until the bananas are soft and the syrup is well caramelized, with the consistency of honey
Let it cool, put the pudding in a serving dish, and serve at room temperature or chilled
