3 passion fruits
1 cup of sugar
1 1/2 cups of water
1/4 cup of passion fruit juice
Cinnamon to taste

Cut the passion fruit in half and discard the pulp
Remove the seeds and reserve the white pith
Cut it into thin strips and place in a bowl
Cover with cold water and let it soak overnight
Drain and reserve
Mix together the sugar, water, and passion fruit juice and simmer over low heat until a syrup forms
Add cinnamon, reserved pith, and continue cooking until tender
Serve chilled.
