Remove the rinds from ripe jenipapos and cut into slices, discarding the seeds. Place them afterwards in a glass jar or bowl. Add sugar to taste, covering the entire surface of the jenipapo. Cover the jar and refrigerate for two hours or more, until a syrup forms. Mix well and serve.
