Scrape the zest from the oranges
Cut into quarters and remove the pulp
Soak in a mixture of water and sugar for five days, replacing the water twice daily
Boil enough water to cover the orange peels
Simmer until the flavors meld together, stirring occasionally
Strain the liquid, let cool, and cut into thick strips
Combine sugar, water, cinnamon sticks, whole cloves, and simmer over low heat, stirring occasionally, until a syrup forms
Add the orange peels to the syrup and cook until they're soft
Peel 2 oranges, removing all white pith
Cut into thin strips and mix with the syrup
Squeeze out any excess juice, add it to the syrup, stir gently, and turn off heat
Let cool, place in a compote dish, and cover.
