Using a suitable utensil or a small knife, remove the seeds and pulp from the mangoes without cutting or peeling the fruit
In a large pot, bring the mangoes and other ingredients to a boil over high heat
When boiling, reduce the heat and cook until the fruit is tender and the syrup has thickened slightly, removing any foam that forms with a skimmer
Remove from heat and let cool
Serve at room temperature or keep refrigerated until serving time

Note: To remove the pulp from the mangoes, prefer utensils that do not damage the fruit: a pointed knife with a cylindrical blade or a serrated ring attached to a long handle
The procedure is the same for both: insert the utensil into the center of the mango and turn it
Then, simply pull it out.
