Remove the rind and cut the watermelon into 2.5 cm cubes
Remove some seeds (some may remain)
In a large saucepan, bring the sugar to high heat, stirring occasionally until it caramelizes
Reduce the heat, add the water in small increments, and stir until dissolved
Add the watermelon, cinnamon, and remaining water
Increase the heat and cook for 30 minutes
Add the hydrated gelatin and mix until dissolved
Remove from heat
Let cool and serve at room temperature or store in the refrigerator in a covered container until serving
