Wash the peaches by gently scrubbing their skin
Cut each peach in half lengthwise, inserting the knife up to the pit
With both hands, turn one half to each side; one will come off
Using a fork or knife, remove the pit from the other half
In a large pot, bring the peaches, sugar, and water to high heat
Let it simmer until the fruits are tender and the skins separate (about 10 minutes)
