1 ripe banana peel, washed and cut
2 cups of confectioner's sugar
4 inches of lemon zest
2 tablespoons of all-purpose flour
1 tablespoon of butter

Place the banana peels in a pan and add 1/2 cup of water
Cook until the peels become soft
Remove from heat and
set the peels and water aside separately
Transfer the peels to a blender and blend until smooth
If necessary, add a little of the reserved water
Remove from blender and pass through a coarse strainer
Add the sugar, flour, zest, and cook over low heat, stirring constantly until the mixture forms a ball
Remove from heat and add the butter
Stir and let cool
Shape into fritters and roll in confectioner's sugar.
