Filling
Combine sugar and water in a saucepan and bring to a boil, stirring until the sugar has dissolved
Remove from heat and let cool slightly
Add the flour mixture to the milk with the egg yolks and egg, whisking constantly until thickened
Bring to a simmer, whisking continuously until thickened.,
Dough
Thaw four sheets of phyllo dough and brush each sheet with melted butter (1)
Place one sheet on top of another, cut into small squares 10 cm x 6 cm (2)
Add a portion of the filling, fold the ends and roll up the longer side (3)
Bake in a moderate oven for 30 minutes or until golden brown
If desired, dust with paprika seeds.
