For the dough
1 packet of active dry yeast, fresh (15g)
1/4 cup of warm water (60ml)
1 cup of milk (240ml)
1 teaspoon of salt
3/4 cup of all-purpose flour (135g)
2 tablespoons of melted butter
1 egg
1/2 teaspoon of ground nutmeg
4 cups of all-purpose flour (480g)
3 cups of vegetable oil (720ml - for frying)
For the glaze
200g of semi-sweet or milk chocolate, broken into pieces
1 1/3 cup of chocolate granulated (225g)

Prepare the dough: in a large mixing bowl, dissolve the yeast in warm water and let it cool down
In another mixing bowl, whisk together the milk, salt, sugar, and melted butter until smooth
Add the cooled-down yeast mixture and mix well
Add the egg, nutmeg, and flour and knead until a smooth dough forms that doesn't stick to your hands
Cover with plastic wrap and let it rise at room temperature for 2 hours
Roll out the dough on a floured surface to about 1cm thick
Cut out circles of about 7.5cm diameter with a center hole of 2.5cm diameter
Place the doughnuts onto a large plate or tray, leaving some space between each one and let them rise for another 30 minutes
Heat the vegetable oil in a medium saucepan over low heat
Fry the doughnuts, two at a time, flipping with a slotted spoon until golden brown (about 3 minutes)
Remove from the oil and drain on paper towels
Let it cool completely before glazing
Prepare the glaze: melt the chocolate in a double boiler set over simmering water, stirring occasionally
In another bowl, place the chocolate granulated
Dip one side of each doughnut into the melted chocolate and then roll it in the chocolate granules
Place them on a tray, side by side, to let the glaze harden before serving at room temperature
