1 1.5 kg golden fish
3 cloves of garlic
1 manjericão sauce
1/2 tablespoon olive oil
6 pickled onions
1/2 cup tomato puree
1 cup white wine
to taste salt and black pepper

optional, dried or fresh celery leaves

Clean the fish and pat it dry inside and out
Mash garlic with manjericão, salt, and black pepper, adding olive oil gradually until a light cream forms
Brush this mixture over the fish (inside and out) as well as a baking dish
Place a layer of chopped onions at the bottom of the baking dish, followed by the fish
Pour tomato puree and white wine over the fish
Bake in a moderate oven for approximately 30 minutes
When serving, sprinkle with salt and finely chopped celery leaves, if desired.
