3/4 cup of milk
1 beaten egg
1/4 cup of melted butter or margarine
2 cups of all-purpose flour
1/2 cup of grated Parmesan cheese
1 tablespoon of active dry yeast
1 pinch of salt
1 teaspoon of ground cinnamon
1 cup of peeled and chopped potatoes, well minced
1/2 cup of raisins
3/4 cup of milk
1 beaten egg

In a bowl, whisk together the egg and milk
Add the melted butter and mix well
Sift in the dry ingredients and add the potatoes and raisins
Add to the egg mixture and stir until the dough is thick and still slightly sticky (don't overmix)
Fill pre-greased mini muffin cups 2/3 full
Bake in a hot oven (200°C) for 20-25 minutes or until golden brown
Serve as an afternoon snack
Makes 12 fritters.
