Dough: Mix the fat, butter, and flour, add the egg yolks and salt
Knead well and let it rest for 1 hour
Roll out the dough thinly in empanada molds
Poke some holes with a fork
Filling: Mix all ingredients, knead very well, and season to taste
Bake in a hot oven for 20 minutes, then reduce heat and bake for an additional 30 minutes.
