4 lingcod fillets (or white fish fillets)

1/2 cup white wine
3 diced tomatoes
2 tablespoons chopped parsley
2 tablespoons finely chopped onion
to taste, black pepper

Roll up the fillets and secure with toothpicks
Melt the butter in a saucepan and add the rolled-up fillets
Add the white wine, tomatoes, parsley, and onion
Allow the liquid to simmer for 12 minutes or until the fish is cooked, turning the roll-ups occasionally
Season with black pepper and serve.
