1 kg of fresh sardine fillets

Dust the sardines with salt and pepper
Heat enough oil in a pan to cover the bottom
Fry the sardines for about 5 minutes on each side
Remove and set aside
Sauté the onions in the same pan for 5 minutes
Add the red wine vinegar, parsley or dill, and lemon juice
Simmer for another 5 minutes
Return the sardines to the pan and heat through
If desired, serve warm
Otherwise, refrigerate and serve chilled with the sauce spooned over the top
Allow to cool and store in the refrigerator for up to 4 days.
