4 cod fillets (900g)

In advance, soak the cod in a large bowl with plenty of water, changing it every four hours
Drain, pat dry with paper towels and dust with flour
In a non-stick skillet, heat the olive oil and butter over medium heat
Fry the cod fillets, flipping halfway through, for 10 minutes or until golden brown
Reserve on a serving plate
In the same skillet, warm the citrus sauce (orange juice, lemon zest, and lime juice) over low heat
Season with salt to taste
In a small pan, warm the olive oil well and quickly fry the chopped parsley and thyme
Drain on paper towels
Heat the cod with the sauce in the skillet to serve, accompanied by the fried herbs.
