Season the chicken and set aside
In a pot, sauté the oil, add the bacon and chicken
Fry until golden brown
Add the garlic, onion, tomato, and cook for 15 minutes over low heat, stirring occasionally
Add 2 cups of water and cook over low heat with the lid on until the meat is tender but not falling apart
Add the corn pieces and add a little more water if there's not enough broth
Cover the pot again and cook over high heat until the corn is tender
Remove from heat and serve
