Heat the olive oil in a pan and add the washed, seedless bell peppers cut into medium strips
Cover and let cook over low heat for a few minutes
Add the peeled tomatoes, olives, and capers
Season with salt to taste and simmer for 20 minutes over moderate heat, stirring occasionally
Add water so as not to run out of liquid
Remove from heat and sprinkle with oregano
Serve in 6 portions.
