Heat the olive oil in a large skillet
Slice the sweet potatoes into 1/2 cm thick rounds and fry with garlic until they're almost tender and golden on both sides
Add the onions and paprika, stir well, and reduce heat
Cover the skillet and cook over low heat for 5 minutes, or until the sweet potatoes are tender
Separate the kale leaves and discard any damaged ones
Chop the kale into pieces, add to the skillet, and season with salt and pepper to taste
Cook covered for a few more minutes, just until the kale wilts
Remove from heat and serve immediately
Serve warm, 6 portions.
