Marinate the chicken breast pieces with lemon juice, salt, and black pepper
Let it rest for about 30 minutes
Assemble the skewers: two chicken breast pieces, one sausage piece, one eggplant slice, onion, chicken breast, and sausage
Dust with salt and black pepper to taste
Place in a hot skillet with 2 tablespoons of olive oil and cook until golden brown, or brush with olive oil and grill on an outdoor grill
Serve 4 skewers.
