8 pieces of 3 cm, cantaloupe, seedless
1/4 cup dry sherry or Madeira wine
4 dried apricots
1 tablespoon brandy
1 tablespoon orange juice
2 nectarines, or fresh peaches, pit-free and cut into 4 pieces
4 pieces of 3 cm banana
1/4 cup melted butter or margarine
1/3 cup crushed cornflakes
4 tablespoons chopped walnuts or cashews
For the topping:
90 g cream cheese at room temperature
4-5 tablespoons orange juice
1 1/2 tablespoons orange liqueur
2 tablespoons grated orange zest

For the topping:

One hour in advance, soak the cantaloupe pieces in dry sherry or Madeira wine
In a small bowl, mix together the brandy and orange juice
Add the dried apricot
In a saucepan, combine the cream cheese, orange liqueur, and orange juice
Heat over low heat, stirring until smooth and creamy
Add the grated orange zest
Thread the fruits onto skewers in the following order: nectarine or peach, cantaloupe, banana, apricot, cantaloupe, nectarine or peach
Brush the skewers with melted butter, then roll in crushed cornflakes to coat
Grill or bake until desired level of doneness, brushing occasionally with the topping
Serve each skewer with 1 tablespoon chopped walnuts or cashews sprinkled on top
