600 g of fish fillet (cherne, garoupa or swordfish) cut into 12 chunks
3 tablespoons of soy sauce
1 tablespoon of vinegar
1 tablespoon of grated ginger
1 tablespoon of honey
2 red bell peppers in cubes
2 cups of clean mushrooms
1/2 cup of orange juice
oil for brushing

In a bowl, mix together the soy sauce, vinegar, honey and ginger
Stir, add the fish and coat it with the marinade
Cover the bowl and refrigerate for about 15 minutes
DRAIN the fish and reserve the marinade
On a wooden skewer, alternate fish, mushroom and bell pepper
Each skewer should have three pieces of each
Arrange the skewers in a baking dish and brush with oil
Bake in a medium oven for 6 minutes on one side, flip and cook for an additional 6 minutes to brown the other side
Check if the fish is cooked by using a knife
While this is cooking, mix together the marinade and orange juice
Put it in the oven and let it simmer until reduced by half
Brush the skewers with the mixture when ready to serve
Serve immediately.
