1 medium onion, finely chopped
2 tablespoons (of soup) of butter or margarine
1 bunch of asparagus, cleaned and trimmed, blanched and chopped
4 tablespoons (of soup) of all-purpose flour
4 eggs, separated
1/2 cup grated Parmesan cheese
salt and black pepper to taste

Sauté the onion in butter until it starts to brown
Add the asparagus and cook well
Add the all-purpose flour and mix well to form a paste
Remove from heat and let cool
Beat the egg whites until stiff and reserve
Beat the yolks and add to the asparagus
Add the grated Parmesan cheese and mix well
Season to taste with salt and black pepper
Add the egg whites and mix carefully
Place in a well-greased, refrigerated baking dish
Bake in a moderate oven (180°C) for 35 minutes
