Cook the spinach and let it simmer for 10 minutes with 1/2 cup of water
Drain the spinach over a colander
Fry the diced bacon and onion together
Saute the spinach with onion and bacon
Season with salt and nutmeg
Season the pork chops with salt, pepper, and olive oil
Fry both sides of the pork chops in olive oil
Assemble the pork chops on top of the spinach and garnish with lemon slices.
