1 1/2 kg of chicken thighs
salt and black pepper
2 tablespoons of oil
1 medium onion, diced (100 g)
3 large garlic cloves, minced
4 tablespoons of lime juice
1 tablespoon of soy sauce
1 1/2 cups of warm water
1/2 cup of peanut paste (130 g)
1 1/2 kg of chicken thighs

2 tablespoons of oil

1/2 cup of peanut paste (130 g)
Fry the seasoned chicken thighs in oil for about 10 minutes or until golden brown, then remove them and set aside
Use only 2 tablespoons of the remaining oil in the pan
Sauté the onion and garlic cloves over low heat for 5 minutes
Add lime juice and soy sauce
Stir well
Cook for a few more minutes
In a separate bowl, mix warm water with peanut paste
Add the mixture to the pan with the chicken
Let it simmer until the chicken is cooked through, about 25 minutes
Remove the chicken and arrange it on a platter
Beat the sauce slightly to thicken it
Pour it over the chicken
Serve hot.
