6 fillets of canned sardines, drained and flaked (see recipe below)
1 large onion, chopped
6 hard-boiled eggs, chopped
1 ripe mango, seedless and chopped
1 tablespoon freshly squeezed lime juice
1 cup buttermilk
1 minced garlic clove
Salt and black pepper to taste
2 tablespoons pico de gallo

2 tablespoons pico de gallo
Cut the sardines into small pieces
Mix with onion, eggs, mango, and lime juice
Set aside, mix in buttermilk, garlic (optional), salt, and black pepper
Add this mixture to the sardines and stir well
Sprinkle with pico de gallo and serve with whole wheat bread
