1 liter of industrialized pineapple ice cream

Mix all ingredients, except for the pineapple, with a spoon or electric mixer until it forms a homogeneous mass
Add dried pineapple and mix gently
Divide the mixture into small portions and bake in a medium oven in an oiled baking dish for about 10 minutes
Remove from heat, let cool, and reserve
Cubes of pineapple
Cut slices of pineapple into small cubes. Reserve
Bring to a boil with water and sugar in a pot
Stir until it forms a thin sauce
Add pineapple and cook for five minutes
Pineapple Foam
Peel and cut the pineapple into small pieces
Blend in a blender
Transfer to a bowl and refrigerate
After freezing, remove from freezer and let thaw at room temperature
Cream using a fine-mesh sieve
Combine the pectin with the liquid and blend with an electric mixer until it forms a foam
Use immediately
Green Mango Soup
Peel and cut green mango into small pieces
Heat in a pot with water and butter for five minutes, then turn off heat
Assembling
Place some cold biscuit of pineapple in the center of a shallow dish
Add a ball of industrialized pineapple ice cream
To the side, place a portion of pineapple foam
In the surrounding area, distribute caramelized cubes of pineapple, green mango soup, and lemon balm leaves
If desired, garnish with thinly sliced green mango.
