1 cup of cooked black plum, seeds removed and chopped
1/3 cup of sugar
1/4 teaspoon of salt
1 tablespoon of lemon juice
1/4 cup of toasted and chopped hazelnut (optional)

Beat the black plum, egg whites, sugar, and salt in a mixer until it's stiff enough to hold its shape
This should take about 5 minutes
Add the lemon juice and hazelnuts if using
Pour into a 1 1/2 liter refrigerator mold or individual molds
Bake at moderate temperature in a water bath for 30-35 minutes, or until it's risen and a thin layer has formed on top
Serve with whipped cream if desired
Yield: 6 servings.
