3 green apples, peeled and cut into pieces

1 tablespoon of cornstarch

One cup of grape juice (240ml)

In a small saucepan, combine the green tea and half cup of water
Bring to medium heat, stirring constantly, until the green tea is dissolved
Leave on the heat, without stirring, until a thick syrup forms (similar in consistency to honey)
In a small refrigerated bowl, sprinkle the gelatin over the remaining water and let it hydrate for 5 minutes
Heat the mixture over high heat in a water bath and stir until dissolved
Combine the green tea syrup, dissolved gelatin, apples, and lime juice in a blender
Blend well
Distribute the cream among six cups with a capacity of half cup each, chilled, and refrigerate for about 2 hours or until firm
PREPARE THE SAUCE: dissolve the cornstarch in water
Combine all the ingredients in a small saucepan and bring to low heat, stirring constantly, until it thickens slightly
Transfer to a bowl, cover with plastic wrap, let it cool a bit, and refrigerate for about 1 hour
To unmold the green mousse, quickly submerge each cup in hot water (without wetting the mousse)
Release it from the edges of the mold with a spatula and flip it onto a plate
Serve with chilled sauce
