1 In a saucepan, mix the gelatin, water, and juice
Add the egg yolks and cook over medium heat, stirring constantly for 10 minutes
Remove from heat
Let cool and refrigerate until it thickens slightly
2 Whip the egg whites until frothy
Add to the gelatin mixture along with the orange or tangerine pieces
3 Place in a 18 cm diameter mold with a hole in the middle, moistened with water and refrigerate until firm
Unmold and serve.
