Place the red wine, cornstarch, and salt in a saucepan and bring to low heat
When it starts to boil, add the dissolved cornmeal in cold water gradually
Remove from heat, add the egg yolks, whisk, and incorporate the egg whites as needed
Pour into an oiled mold and bake in a water bath
Let it cool and serve in decorated cups with candied cherries.
