1 In a skillet, melt the butter, sauté the corn, onion, and garlic for about 3 minutes
2 Add the vegetable broth, season with salt and black pepper
Add the breadcrumbs and cook for an additional 2 minutes
Turn off the heat, sprinkle with scallion and serve with white rice
