3 red onions, cut into small cubes
2 green peppers, cut into small cubes
1/2 cup of olive oil
1/3 cup of butter
6 lightly beaten eggs
2 tablespoons of vinegar
5 cups of cassava flour
Salt and black pepper to taste
1/2 cup of green olives, sliced
1 cup of finely chopped scallions

In a large frying pan, fry the onion and bell pepper in hot olive oil for 5 minutes
Add the butter and when it melts, add the eggs and mix well with a spoon
When the eggs are cooked through, add the vinegar and then the cassava flour
Fry for 5 more minutes, stirring constantly, until the farofa is lightly toasted
Season to taste
Heat just before serving, mixing in the olive slices and scallion rings.
