1/4 cup of olive oil
3 medium tomatoes, seedless, diced
1 onion, diced
5 green scallions, chopped
1/4 cup of finely chopped parsley
2 tablespoons of vinegar
3 cups of cornmeal
1/3 cup of water
4 hard-boiled eggs, diced
1 teaspoon of salt
a small amount of bell pepper, chopped

In a medium skillet, heat the olive oil over high heat
Cook the tomato, onion, and scallion until they're soft (about five minutes)
Add the parsley, vinegar, and stir
Remove from heat
Add the cornmeal and water, mixing well
Combine the egg, salt, and bell pepper
Mix well
Serve immediately.
