In a large skillet, melt the butter and add the oil
Sauté the chopped onion for two minutes
Add the corn and cornmeal
Season with salt and pepper
Mix well and remove from heat
Sprinkle with cilantro and serve immediately
If desired, add crumbled bacon or Italian sausage
