Biscuit Dough:
4 eggs

1 tablespoon of cornstarch

Vanilla Cream:

4 tablespoons of cornstarch

2 cups of milk
1 teaspoon of vanilla extract
Whisper:
1/4 cup of water
1 cup of sugar
1 egg white
1 1/2 cups of gelatin or fruit of your choice (such as sliced pineapple, fresh figs)

Biscuit Dough:

1 cup of sugar
1 egg white
1 1/2 cups of gelatin or fruit of your choice (such as sliced pineapple, fresh figs)
To make the cake batter: mix all ingredients quickly to obtain a smooth batter
Roll out the dough on a floured paper plate to the size of an 11-inch x 8.5-inch baking dish
Turn the dough over onto the baking dish, making sure it covers the entire bottom
Trim the edges, leaving a 0.5-centimeter border around the entire baking dish
Use a fork to poke holes in the dough and bake in a moderate oven (180°C) preheated until golden brown
Unmold and reserve
To make the biscuit batter: beat the egg whites with sugar until stiff peaks form
Add the egg yolks and beat well
Add the wheat flour sifted with cornstarch, grated lemon zest, and mix delicately
Place in a greased and floured 11-inch x 8.5-inch baking dish and bake in a moderate oven (180°C) preheated for 25 minutes
Unmold and reserve
Prepare the vanilla cream by mixing sugar with cornstarch
Add the egg yolks mixed with milk and vanilla extract
Heat over low heat, stirring constantly, until thickened
Remove from heat and let cool
Assemble the cake as follows: cut both doughs in half lengthwise
Place one of the cakes in a serving dish and top with a little of the vanilla cream and some fruit or gelatin, then cover with biscuit batter and repeat layers until finished with biscuit batter
Top with whisper prepared as follows: place water and sugar in a saucepan over low heat to make a syrup-like consistency
Beat egg white until stiff peaks form and add the syrup, beating constantly until thickened and forming a firm meringue
Place in a piping bag with a smooth tip and pipe onto the cake.
